One-Pot Chicken Stew

Selfadvocatenet.com Recipe for Month of April 2026

This one-pot chicken stew recipe was so good that I had to write the recipe down.

This would be excellent with crusty bread and a bright green salad.

Prep Time: 15 mins
Cook Time: 35 mins
Total Time: 50 mins
Servings: 3
  • 1 tablespoon vegetable oil
  • 3 (5 ounce) boneless, skinless chicken thighs, cut into bite-sized cubes
  • 1 large onion, chopped
  • ¼ cup all-purpose flour
  • 4 cups water
  • 3 cups skin-on cubed potatoes
  • 1 cup diced carrot
  • 1 tablespoon chicken soup base
  • 1 tablespoon Herbes de Provence
  • 1 cup chopped button mushrooms
  • ½ cup diced green bell pepper

Directions

  1. Heat oil in a Dutch oven or large pot over medium heat. Add chicken and onion; cook and stir until browned, 5 to 7 minutes. Add flour; cook and stir until mixture is coated, 2 to 3 minutes.

  2. Add water, potatoes, carrot, soup base, and Herbes de Provence. Cover and simmer, 15 to 20 minutes. Add mushrooms and peppers; simmer until vegetables are tender, 10 to 15 minutes more.

Cook’s Note

You can use 4 cups chicken stock plus salt and ground black pepper to taste instead of the water and chicken base, if preferred.
