We start with what is Remembrance Day
Every year on November 11, Canadians pause in a moment of silence to honor and remember the men and women who have served, and continue to serve Canada during times of war, conflict and peace. We remember the more than 2,300,000 Canadians who have served throughout our nation’s history and the more than 118,000 who made the ultimate sacrifice

Premier David Eby has issued the following statement marking Remembrance Day
Victoria Monday, November 11, 2024 7:30 AM

“We will pause for two minutes of silence today on the 11th hour of the 11th day of the 11th month.
“At cenotaphs across the province, we will stand alongside veterans, merchant mariners and serving members of the armed forces to reflect on the terrible cost of war.
“This sombre day is a reminder of the sacrifices of Canadians in two world wars and other conflicts around the globe. We also remember the price paid by their families.
“Remembrance Day also offers an opportunity to acknowledge the bravery of those who served, as well as the ongoing commitment of those who seek to preserve peace and security.
“Today, as we should every day, we remember the fallen who never came home. Lest we forget.”
The Prime Minister, Justin Trudeau, today issued the following statement on Remembrance Day

“For generations, Canadians have answered the call of duty. In the tunnels and trenches of Vimy. On the beaches of Dieppe and Normandy. In the mountains of Afghanistan. Canadian Armed Forces members and veterans have – throughout every chapter of our history – kept Canadians safe. Signing up to serve in times of war and peace. Leaving behind their family for days, weeks, and months. Fighting shoulder to shoulder alongside Allies, against artillery fire, missiles, and bombs. Some returned home from the battlefield never truly the same. Others never returned at all.
“Earlier this year, we marked 80 years since over 14,000 Canadians stormed Juno Beach on D-Day. The tragic loss we faced that day, the sacrifice our troops endured, and the defining victory that D-Day inspired is a vivid reminder of their courage and devotion.
“Canadian Armed Forces members continue to serve to this day – during wildfires and floods, in remote search and rescues, training our Ukrainian friends, and standing guard for our country and continent. When our friends and Allies see the Maple Leaf emblazoned on a uniform, they see a legacy of courage that has kept the world safe and prosperous. That legacy will live on – through epitaphs, through monuments and memorials, through stories of patriotism, and through remembrance.
“On Remembrance Day, it is our tradition to pay tribute to those who have served. But it is also our obligation. A way of recognizing a debt that we can never fully repay. When families gather to reflect across small towns and big cities, at cenotaphs and cemeteries, during ceremonies, and on sacred ground – we remember. When our kids read ‘In Flanders Fields’ or listen to the ‘Last Post’ for the very first time – we remember. When the country takes a moment to pause at 11:00 a.m., proudly wearing poppies over our hearts – we remember.
“On this Remembrance Day, and every day, let us pay tribute to Canada’s veterans and Canadian Armed Forces members. Let us carry the light of remembrance into the future. We stand today, free and at peace, because of them.
“Lest we forget.”

Why We Wear Poppies On Remembrance Day
Why do we wear poppies? The reason poppies are used to remember those who have given their lives in battle is because they are the flowers which grew on the battlefields after World War One ended. This is described in the famous World War One poem In Flanders Fields.

- 0.08 cup olive oil
- 0.33 teaspoon lemon zest
- 0.08 cup lemon juice freshly squeezed
- 1 tablespoons honey
- 1 garlic cloves minced
- 0.33 teaspoon paprika
- Pinch of crushed red pepper flakes optional
- 0.67 tablespoons chopped Italian parsley
- 0.33 teaspoon kosher salt
- 0.17 teaspoon black pepper
- 0.33 lb. shrimp 16-20 or 21-25 count per lb., peeled and deveined
For The Corn:
- 1.67 ears of corn
- 1 tablespoons of olive oil or unsalted butter
- 0.17 teaspoon kosher salt
For The Salad Dressing:
- 0.17 cup extra virgin olive oil
- zest of a lime
- 1 tablespoons of lime juice freshly squeezed
- 0.33 clove of garlic minced
- 0.33 teaspoon salt make sure to adjust the level of salt based on the saltines of your feta cheese
- 0.17 teaspoon black pepper
For The Salad:
- 0.33 large head of Boston or butter lettuce leaves separated, rinsed
- 0.33 cup of cherry tomatoes
- 1 scallions chopped
- 0.33 cup of feta cheese crumbled
Instructions
For the Grilled Shrimp:
- Soak the skewers: If using wooden skewers, soak them in water for at least 20 minutes.
- Make the marinade: Place olive oil, lemon zest, lemon juice, honey, garlic, paprika, red pepper flakes, parsley salt, and pepper in a bowl. Give it a whisk until fully combined.
- Place shrimp and marinade in the bowl and toss to coat. Cover it with plastic wrap and refrigerate for 15 minutes.
- Skewer the shrimp: Thread the shrimp on skewers starting from the thickest part of the shrimp and arranging 5-6 shrimp per skewer. Place on a plate and set aside.
- Grill: Heat the grill to 400 to 450 F degrees. Grill the shrimp skewers on direct heat for 2-3 minutes or as soon as it turns pink along the edges and then flip over and cook for another 2 minutes or until it is lightly charred.
- Transfer the now-cooked shrimp onto a plate. When cool enough to handle, remove the shrimp from the skewers and set aside.
For The Grilled Corn:
- Fold the husk of each corn back leaf by leaf and tie them with a kitchen twine.
- Brush each ear with oil on all sides and sprinkle them with salt.
- Grill over medium-high heat until lightly charred on all sides, brushing with oil, turning and checking every few minutes. This takes about 10-12 minutes.
- Transfer the now-grilled corn onto a cutting board and let it cool. When cool enough to handle, cut corn kernels from the cobs. Transfer to a bowl and set it aside.
To Make The Dressing:
- Mix all ingredients together in a small bowl and set it aside.
To Assemble The Salad:
- Place butter lettuce leaves, tomatoes, scallions, corn, and shrimp in a large salad bowl. Top it off with crumbled feta cheese.
- Drizzle it with the dressing and give it a gentle toss.
- Serve immediately.
- Have all ingredients (mise-en-place) ready before you start. This is one of those recipes with several components but each component takes a little hands-on time to put together so you would have to do one thing while waiting for the other to complete.
- Be sure to taste test your feta before adding more salt: As it is with every recipe with feta cheese, you might want to check the saltiness of the one you are using before adding more salt into the recipe.
- Make-Ahead: If you want to save on time, I recommend making the shrimp marinade and the lime vinaigrette in advance. And then when you are ready to serve, you can marinate the shrimp while grilling the corn. And while the grilled corn is cooling, you can thread the marinated shrimp on the skewers. I recommend assembling the salad at the last minute as Boston lettuce leaves do not stand well with the acidic ingredients in the salad.
- Storage: You can store the leftovers in an airtight container to enjoy the next day. However, please be aware that the green leaves of the butter lettuce will wilt quite a bit.
